1.5 lbs lamb shoulder, cut into cubes ๐
1 large onion, diced
3 garlic cloves, minced ๐ง
1 tablespoon olive oil
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon turmeric
1 cup dried apricots ๐
2 tablespoons honey ๐ฏ
1 cup chicken or vegetable broth
1 can (14 oz) diced tomatoes
1/4 cup slivered almonds (optional)

Fresh cilantro for garnish ๐ฟ
Directions
- Heat olive oil in a large pot or tagine over medium heat. Add the diced onion and cook for 5 minutes until softened.
- Add the minced garlic and cook for another 1-2 minutes, until fragrant. Stir in the cinnamon, cumin, coriander, ginger, turmeric, salt, and pepper, and cook for 1 minute to toast the spices.
- Add the lamb cubes to the pot, and brown them on all sides, about 5-7 minutes.
- Stir in the apricots, honey, diced tomatoes, and broth. Bring to a simmer, cover, and cook on low heat for 1 hour to 1 hour and 30 minutes, or until the lamb is tender.
- Serve the tagine over couscous or rice, garnished with slivered almonds and fresh cilantro.
Notes
- If you donโt have a tagine, you can use a Dutch oven or any heavy-bottomed pot with a lid.
- For an extra layer of flavor, lightly toast the almonds before adding them as a garnish.
- Adjust the sweetness by adding more or less honey or apricots to your taste preference.
