  • 200g speculoos cookies (crushed) 🍪

  • 600g cream cheese (like Philadelphia) 🧀

  • 70g butter (melted) 🧈

  • 100g sour cream 🍦

  • 150g sugar 🍬

  • 1 organic lemon (zested and juiced) 🍋

  • 3 eggs 🥚🥚🥚

  • 25g cornstarch (Maïzena) 🌽

Directions

  • Prepare the Crust: Crush the speculoos cookies into fine crumbs, mix with melted butter, and press into the bottom of a parchment-lined springform pan. Use a spoon and glass to compact the crust. Chill in the fridge. 🍪🧈
  • Preheat Oven: Set your oven to 180°C (350°F). 🔥
  • Make the Filling: Zest and juice the lemon. In a stand mixer, blend cream cheese and sour cream until smooth. Add sugar, lemon juice, and zest, and mix well. Incorporate eggs one at a time, mixing continuously. Finally, fold in cornstarch. 🧀🍋
  • Bake: Pour the filling over the crust, smooth the top, and bake for 1.5 hours at 100°C (212°F). Turn off the oven and let the cheesecake rest inside with the door closed. 🕒
  • Chill: Refrigerate for at least 6 hours, or up to 24 hours, before serving. ❄️🍰
