50 g lamb meat cut from the shoulder
1 tomato, seeded and grated
1 medium onion, chopped
1 tsp salt
1/2 tsp pepper
1 tsp ginger
1 tsp turmeric
5 cl peanut oil
1 cinnamon stick
1 small bunch coriander
60 cl water
For the garnish:
500 g small okra
300 g long zucchini
80 g cherry tomatoes
1 clove garlic, minced
1 tbsp chopped coriander
Directions
- In a pot over low heat, brown the onion and grated tomato in the oil for 2 minutes.
- Add the pieces of meat, spices, bunch of coriander and moisten with water. Bring to a boil and lower the heat. Simmer, covered.
- When the meat is cooked, remove it and keep warm. Pass the sauce through a strainer and return it to the pot.
- Remove the stalks from the okra and cut the zucchini into regular pieces. Place the vegetables in the pot, add the cherry tomatoes, coriander and minced garlic. Cover the pot and simmer until the vegetables are cooked “avoiding stirring with a spoon so as not to crush the vegetables”.
- Reheat the meat and place it on a serving dish, garnish with vegetables and cover with sauce. Serve the dish hot.
