200g (7 oz) linguine 🍝
200g (7 oz) mixed seafood (shrimp, mussels, clams, squid) 🦐🦑
2 tbsp olive oil 🫒
3 cloves garlic, minced 🧄
1 small onion, finely chopped 🧅
1/2 cup white wine 🍷
1 can (14 oz) diced tomatoes 🍅
1/2 tsp red pepper flakes (optional) 🌶️
Salt & black pepper, to taste 🧂
1/4 cup fresh parsley, chopped 🌿
Juice of 1 lemon 🍋
Directions
- Cook the linguine until al dente. Reserve 1/2 cup of pasta water, then drain. 🍝
- Prepare the seafood: clean clams/mussels, peel shrimp, and slice squid. 🦐🦑
- Make the sauce: Heat olive oil, sauté garlic & onion until translucent. Add white wine and let it reduce. 🍷
- Add tomatoes and seafood to the pan. Cook until seafood is done. Clams/mussels should open. 🍅🦑
- Combine linguine with the sauce, adding reserved pasta water if needed. Toss with parsley and lemon juice. 🍋🌿
